Quick and healthy


This is a version of what I call my ‘Casserole chicken’.

2 chicken legs, 2 table spoons of low fat salad dressing/ mayonnaise, lime juice, oregano + chilly + pepper flakes, 2 finely cubed potatoes, half a chopped tomato, some split chillies, 1 chopped onion, salt.

I put all of this in the microwave and then put on the tandoori function (26 minutes of grilling and cooking). Quite tasty, easy AND healthy unless you add butter or cheese

it's the tastiest non-fat continental dish I've had. In fact, it's one of the tastiest dinners I've had. period.

We don't have a tandoori function on our microwave. haha

In fact this one of the first times that we tried the preset menu. Do you have the grill function? Earlier I would put in plain cooking for 12 minutes. Then combi (cook + grill) for 6 minutes and then just on the grill function for 5 minutes and then let it stand for a couple of minutes

No grill function....We have functions like frozen vegetables, popcorn, and frozen entrees. What does that tell you about America? Anyway, I don't pay attention to any of those settings. I only really use the microwave to reheat left-overs occasionally, and it happens to be good for heating corn-on-the-cob.

I think the American micro manufacturers come from the context that most Americans have an oven so might not use the micro for cooking...my kitchen is very tiny so we can't fit in an oven. I live in Mumbai which is our NY equivalent including the match box like houses. So I use the micro for grilling roasting, etc
